What Real Vanilla Is

Vanilla planifolia pods, hand-pollinated and cured for months. The active aromatic molecule is vanillin, but real vanilla contains 250+ secondary molecules that synthetic vanillin cannot replicate.

Madagascar bourbon vanilla is the standard; Tahitian vanilla is sweeter; Mexican vanilla has a darker, woodier character.
